Two of our favorite lunches are super quick, and one of them is highly portable too :). They’re Mini Pizzas and Granny Pizzas. Some people call the Mini Pizzas English Muffin Pizzas, which we always used. I’m sure you can substitute any small bread product, we’ve used toast before in a pinch, I’m sure other things would work too.
First the Mini Pizzas, a staple in our house growing up.
- English Muffins, open-faced
- Pizza Sauce (or tomato sauce with oregano/basil/garlic powder stirred in, or a slice of fresh tomato, or some salsa … whatever is handy!)
- Grated or sliced cheese
- Pepperoni/sliced mushrooms to taste
Lightly toast the English muffins, spread tomato sauce on top, add cheese and toppings, and broil for about 3-4 minutes till the cheese is bubbly. I always do them in the toaster oven, which makes cleanup faster and easier.
Mess-free to eat, great for little fingers, and always a kid-pleaser here. I buy English Muffins when they’re on the two-pack sale, and keep them in the freezer for quick lunches or breakfasts.
I have my cousin Rose to thank for these, not sure where she got them? We skip the sauce generally to make them less messy and more portable-friendly, but as you wish!
- Tortillas (my boys prefer corn for this, and the size is nice)
- Pepperoni (to taste)
- Tomato Sauce (optional)
- Sour Cream for dipping (optional)
In a dry skillet on med/low heat, put one tortilla, top with cheese and pepperoni, heat till nicely melted. Top with another tortilla, flip for another 1-2 minutes, and let it cool a bit before cutting into wedges. If you want, add a swirl of sauce over the cheese, or put it on the side for dipping. Flour tortillas will get brown a bit faster than the corn ones, and need to be watched a little more closely. Douglas gets these for lunch quite often, and they travel really well.
