Would You Like Some ... Broiled Tilapia Parmesan?

I know a lot of us are in a very unseasonable heat wave, but this only takes a quick broil, and I almost always do it in the toaster oven which is my best-summer-cooking friend. The sauce is a delightful mix of tangy cheese and lemon, creaminess, and just enough herbs to give it some real savor. 

Broiled Tilapia Parmesan

  • 1/2 c. grated parmesan
  • 1/4 c. softened butter
  • 4 T. mayo
  • 2 T. fresh lemon juice
  • 1/4 t. garlic powder
  • 1/4 t. dried basil
  • 1/2 t. black pepper
  • 1/8 t. onion powder (i double this)
  • 1/8 t. celery salt
  • salt to taste
  • up to 2 lb tilapia fillets (or other firm white fish)
    If you really do use 2 pounds I’d definitelyl double the sauce, it’s really good over rice!


Set oven to broiler heat (I use the toaster oven for about one pounds worth)
Whisk all ingredients but the fish together into a sauce
Foil line a broiler pan, lay fish in single layer
Broil the fish 2-3 min per side
Remove from the oven, spread the sauce over the top, return to the broiler till topping is browned and bubbling and driving you nuts with how good it smells.

We always have it over rice or quinoa and a steamed leafy green. Enjoy!
