Would You Like Some ... Sweet Potato Fries w/Avocado Dip?

This was part of supper tonight, and I’ve been craving sweet potatoes for awhile.  Delish, healthy, and pretty fast to put together too!  The kids love sweet potatoes, and it’s yummy to keep them hot and crispy so you can dip them in a spicy/cool avocado concoction before devouring them in a single bite.  The kids might take two bites to get one down :). 

Sweet Potato Fries with Avocado Dip

… Preheat oven to 450, and line a big cookie sheet with foil. 

Then prep:

  • 2 large sweet potatoes, cut into 1/4” thick fries (leave the skin on)
  • 2 T (at least) olive oil

… and toss together in a large bowl.

Then add:

  • 1 t. paprika (smoked is good if you like the heat!)
  • 1/2 t. chili powder
  • 1/2 t. ground coriander
  • salt/pepper to taste

… toss to coat, and feel free to go a bit heavier on the spices

Place in a single layer on the lined cookie sheet, and bake on the bottom rack of the oven for 20 min.

… This after it’s been half-devoured by a hungry horde, or what feels like a horde but is really just 3 tired males and one frazzled mom. Meanwhile get that Avocado Dip whipped up:

  • 1/3 c. cream cheese
  • 1/3 c. mayonnaise
  • 1 avocado
  • 1 jalapeno, seeded and diced
  • 2 scallions, diced
  • 1 lime, juiced
  • salt/pepper to taste

… Combine all ingredientes in a food processor or blender for about a minute, till smooth.  Or refuse to get the blender dirty for just that one minute, and mash it all together by hand.  It’s better smooth tho, just so you know. 

Now that those fries are a bit soft, move them to the top rack of the oven for another 10 minutes to crisp them up. 

Serve hot, and just try to keep from licking your fingers :).
